Cashew Butter Mutton Masala Recipe

My custom recipe for today is called the Cashew Butter Mutton Masala. You all would have tried Butter Chicken and other varieties. This one is kinda unique. The main ingredients in this recipe is Butter, Cashews and and Mutton. This is one of my signature dish with a unique taste. This dish is very mild in spice and hence kids will enjoy this dish very much. The blend of Butter and Cashews makes the masala just awesome and will leave you mouth watering for sure…. Cashew Butter Mutton Masala Recipe 

Ingredients for lamb marination:

  1. Boneless Lamb – 400 gms
  2. Unsalted Butter – 25 gms
  3. Unsalted Roasted Cashews – 50 gms
  4. Jaffna Roasted Curry Powder / Chilli powder  – 1 tsp (increase this if you need more spice)
  5. Pepper Powder – 1 tsp
  6. Garam Masala Powder – 1/2 tsp
  7. Turmeric Powder – 1/2 tsp
  8. Ginger Paste – 1 tsp
  9. Garlic Paste – 1 tsp
  10. Plain Yoghurt –  1 tbsp
  11. Salt – as required
  12. Full Cream Milk – 100ml
  13. Olive oil – 3 tbsp
  14. Onion – 1 large (finely chopped)
  15. Tomatoes – 2 small (finely chopped)
  16. Water – 1 cup (use while cooking only)

Ingredients for seasoning:

  1. Fennel seeds – 2 tsp
  2. Bay leaves – 3
  3. Unsalted Butter – 25 gms

Preparation Step 1: Cook the Lamb:

  • Clean the lamb pieces and put in a seperate mixing bowl
  • Add all the above mentioned marination ingredients together and mix thoroughly (except for the water)
  • Set it aside for 30 minutes
  • Put the mixture in a pressure cooker (use any closed cooking vessel if pressure cooker not available) and add the water.
  • Cook for atleast 15 whistles or till the meat is tender
  • Once done keep the mixture aside

 

Preparation Step 2: Seasoning:

  • Make seasoning by heating the butter and add the fennel seeds and bay leaves.
  • Once the seeds and bay leaves changes colour, remove them from flame
  • Pour into the Lamb mixture and mix well.

Final step: Garnish with Fresh coriander leaves and serve hot.
