Creamy Drumstick Lamb Curry recipe

My custom recipe for today is called the Creamy Drumstick Lamb Curry. The main ingredients in this recipe is   Drumstick and the cream which is made up of grated coconut, cashews and almonds. This is a subtle dish with a unique taste. The aroma of Drumstick, dry nuts and coconut makes the curry just awesome and will leave you mouth watering for sure…. Creamy Drumstick Lamb Curry Recipe 

Ingredients for lamb marination:

  1. Boneless Lamb – 400 gms
  2. Red Chilli Powder – 1 tsp (increase this if you need more spice)
  3. Garam Masala Powder – 1 tsp
  4. Pepper Powder – 1/2 tsp
  5. Turmeric Powder – 1/2 tsp
  6. Coriander Powder – 2 tsp
  7. Ginger Paste – 1 tsp
  8. Garlic Paste – 2 tsp
  9. Plain Yoghurt –  3 tbsp
  10. Salt – as required
  11. Fresh Lime juice – 2 tbsp (use for cleaning only)
  12. Olive oil – 3 tbsp
  13. Water – 1 cup (use while cooking only)

 

Ingredients for making cream:

  1. Grated fresh coconut – 1/3 cup
  2. Unsalted roasted cashews – 1/3 cup
  3. Almond flakes – 1/3 cup 
  4. Red chilli – 1 no.
  5. Green chilli – 1 no.

 

Ingredients for making the curry:

  1. Onion – 1 large
  2. Tomatoes – 2 medium
  3. Drumstick – 1 large
  4. Fennel seeds – 2 tsp
  5. Cinnamon stick – 1 medium
  6. Cloves – 3 nos.
  7. Bay leaf – 2
  8. Salt – as required
  9. Olive oil – 4 tbsp

Preparation Step 1: Cook the Lamb:

  • Clean the lamb pieces with lime juice and put in a seperate mixing bowl
  • Add all the above mentioned ingredients together and mix thoroughly (except for the water)
  • Set it aside for 30 minutes
  • Put the mixture in a pressure cooker (use any closed cooking vessel if pressure cooker not available) and add the water.
  • Cook for atleast 15 whistles or till the meat is tender
  • Once done keep the mixture aside

 

Preparation Step 2: Making the Cream:

  • Put all the ingredients together in mixer / blender to make a fine paste. Add water as required (tip: add water after the ingredients are grinded thoroughly)

 

Preparation step 3: The Curry Making:

  • Pour oil in a cooking pan
  • Add the fennel seeds, cinnamon, cloves, bay leaves and sauté 
  • Now add the onions and sauté until golden brown
  • Add tomatoes, drumsticks and sauté (saute until the tomatoes and drumsticks are well cooked)
  • Now add the cooked lamb mixture and sauté for 5 min
  • Add the cream and sauté for 10 min.
  • Add salt if required
  • Chop fresh coriander leaves and curry leaves and garnish on the curry
  • Switch off the flame and switch on your taste buds.

Besan Cookies Recipe

Besan Cookies Recipe

This is one of the awesome snack of all times. Hence thought of sharing this simple recipe to you all. Try it out and let me know your comments.

Ingredients:

1) Besan flour – 1 cup

2) Maida / Plain flour – 1 cup

3) Solid Ghee – 2/3 cups

4) Icing / Caster Sugar – 1 cup

5) Cardamom powder – 1/2 tsp

6) Baking soda / Baking Powder – 1/2 tsp

7) Salt – 1/3 tsp

Preparation:

1) Sift Besan flour, Plain flour, Baking Powder, Cardamom powder and salt in one bowl

2) Whisk the ghee and sugar in a separate bowl

3) Add the flour mixture into the wet mixture and mix to make fine dough

4) Roll dough into small balls and slightly flatten

5) Place the dough pieces in the baking tray

6) Preheat oven to 170 degree celsius and place the baking trays with the dough pieces

7) Bake for 10 minutes on each side (10 min one side, flip it and then another 10 min). Over baking may burn the cookies. So keep checking the cookies until they are golden brown.

8) Remove the cookies from oven, let them come to normal temperature and enjoy your BESAN COOKIES.
